We provide one of the greatest culinary traditions that still exist today, anywhere. Ethiopian cuisine is a feast for the eyes as much as the palate. Our menu consists of various meat-based dishes as well as vegetables prepared with great care.

Kitfo, a cherished dish in Ethiopia, features lean meat minced and warmed with butter, mitmita, and sometimes thyme. Similar to French steak tartare, it's often served leb leb (warmed) but can be cooked upon request. Enjoyed with aib and gomen, it's a flavorful treat praised for its nutritional benefits.
LEGA TIBS: Lega Tibs is made from cubes of beef sautéed with garlic, onion, tomatoes, and jalapeno. It is one of the most popular dishes among Ethiopians.
DEREK TIBS: Derek Tibs is similar to lega tibs in its ingredient, ie, beef cooked with onions, garlic, tomatoes and jalapeno. However, the cooking method used produces more chewy and equally flavorful cubes.
GODEN TIBS: Here at Shoa, we are known for it! Goden Tibs is a choice for many Ethiopians. Short ribs marinated in fresh onion, garlic powder, berbere, olive oil, and rosemary.
ZILZIL TIBS: Strips of tender beef marinated in a house sauce, rosemary, powdered garlic and house spices sizzled in olive.
AWAZE TIBS: It cannot get saucier. Lightly sautéed tender cubed pieces of beef mixed with our home made awaze sauce and onion, garlic and jalapeño pepper (spicy)
Gebe Wota is lightly sautéed in olive with fresh onions, garlic, green pepper and rosemary. The cooking method produces a tasty soft chew.
Tere siga, a beloved Ethiopian delicacy, features cubes of raw red meat eaten with injera or bread. Dipped in mitmita, it's enjoyed for its rich flavor. Legend has it that its popularity arose as a military tactic in the 16th century to avoid detection.
Gored Gored is a variation of the Kitfo concept. Instead of the meat being minced finely, the leanest part of meat is cut into cubes and marinated with purified home made butter. It is spiced up with cardamon, berbere, powdered garlic, and mitmita. Roll it up in the soft injera and enjoy!
If you are not on the meat side, we have the popular multicolor and inviting vegetarian platter for you. This platter consists of sauces made from lentils, chickpeas, carrot, cabbage, collard green served with injera.
Hand cleaned lamb trip and liver mixed with lean red meat, fish, finely chopped onion, garlic, jalapeño pepper, herbal butter, cardamon, and mitmita. Can be ordered raw, medium, or well done.
Spicey! We have crunchy fish in our own home-made bold goulash sauce.
Lightly breaded crisp catfish served with romaine, tomato, red onion, green pepper, lemon juice salad.
Lean chicken breast is stir fried with virgin oil. It comes with romaine, tomato, red onion, green pepper, lemon juice salad.
